Penne alla Vodka

vodka3-4 tbsp

whole peeled tomatoes1 can
🍳 Cookware
- food mill
- blender
- pot

1Slice garlic thin.garlic: 3 cloves

2Slice prosciutto into little strips.prosciutto: 4 oz

3Puree whole peeled tomatoes in a food mill or a blender .whole peeled tomatoes: 1 can

4Get a pot of salted water on the stove for the penne pasta and a wide-bottomed pan next to it to cook the sauce.penne pasta: 1 lb

5Add the prosciutto and olive oil to the pan.olive oil: 2-3 tbsp

6Cook over medium-high heat until the prosciutto just begins to crisp up.

7Add the basil and garlic.

8Turn the heat off.

9Add vodka .vodka: 3-4 tbsp

10Let it sizzle and calm down.

11Turn the heat back on.

12Reduce the vodka until it’s almost nothing.

13Add the tomatoes.

14Cook the tomatoes on medium heat until it reduces and becomes very thick.

15Once the sauce has thickened, add the cream .cream: 3/4 c

16Bring sauce to a simmer.

17Cook it on a simmer for a few minutes to thicken.

18Cook the penne in the salty water.

19Once the pasta is al dente, drain and transfer to the sauce.

20Marry the sauce with the pasta for a couple of minutes until the sauce coats the pasta.

21Drop in unsalted butter and a little pasta water to control the consistency of the sauce.unsalted butter: 2 tbsp

22Serve immediately with parmesan and fresh parsley .parmesan: 1/2 c, fresh parsley: 4 tbsp
