Penne alla Vodka

  • whole peeled tomatoes

    Slice garlic thin.
    garlic: 3 cloves

    Slice prosciutto into little strips.
    prosciutto: 4 oz

    Puree whole peeled tomatoes in a food mill or a blender .

    Get a pot of salted water on the stove for the penne pasta and a wide-bottomed pan next to it to cook the sauce.

    Add the prosciutto and olive oil to the pan.
    olive oil: 2-3 tbsp

    Cook over medium-high heat until the prosciutto just begins to crisp up.

    Add the basil and garlic.

    Turn the heat off.

    Add vodka .
    vodka: 3-4 tbsp

    Let it sizzle and calm down.

    Turn the heat back on.

    Reduce the vodka until it’s almost nothing.

    Add the tomatoes.

    Cook the tomatoes on medium heat until it reduces and becomes very thick.

    Once the sauce has thickened, add the cream .

    Bring sauce to a simmer.

    Cook it on a simmer for a few minutes to thicken.

    Cook the penne in the salty water.

    Once the pasta is al dente, drain and transfer to the sauce.

    Marry the sauce with the pasta for a couple of minutes until the sauce coats the pasta.

    Drop in unsalted butter and a little pasta water to control the consistency of the sauce.
